Pea and goat cheese crostini


Ingredients

  • ½ cup peas

  • 4 tsp. of olive oil

  • 2 tbsp. chopped mint

  • 1 small baguette (cut in 4-5 crostini)

  • A handful of soft goat's cheese

  • Salt, black pepper, and chili flakes


directions

  1. Boil the shelled peas, then drain them, and place in a bowl.

  2. Lightly Squash the peas with a fork and drizzle some olive oil, 1 tbsp. chopped mint and some salt and black pepper.

  3. Grill the crostini in oven until golden brown.

  4. Top the griddled crostini with the peas, crumbled soft goat’s cheese, a few small mint leaves and trickle some olive oil. Then add a little crushed sea salt, a pinch of black pepper, and few chili flakes. Serve and enjoy!
