Salmon power bowl


Ingredients

  • 4 ounces salmon skinless

  • 1/2 cup and cubed potatoes 

  • 1/4 cup chicken broth

  • 1/2 cup broccoli

  • 1/2 cup spinach

  • 2 tablespoon Italian salad dressing

  • 1 sliced lemon

  • 1 tbsp. chopped cilantro

  • 2 tsp. olive oil

  • Kosher salt to taste

  • 1 tsp. ground pepper

  • 1 tsp. chopped coriander

  • 1 cup water


directions

  1. Preheat oven to 400°F.

  2. Make a mixture of olive oil, salt, and pepper in a small bowl and apply it all over the washed pieces of salmon. Then place in oven, and roast for around 20 minutes, or until firm and flaky.

  3. While the salmon is roasting, take potato cubes in a stainless steel pan, add 1 tsp. olive oil and some salt, and roast them until potatoes are tender. Place aside to cool.

  4. Preheat a non-stick pan. Add broccoli with 1/4 cup chicken broth. Cook for about 5 minutes.

  5. Place spinach in serving bowls. Top with broccoli and potatoes. Add salt and pepper, mix them.

  6. Place the roasted salmon on top.

  7. Drizzle with Italian salad dressing and sprinkle coriander and cilantro.

  8. Serve with lemon slices. Enjoy!
