Ginger soda


Ingredients

  • 2 cups water

  • 1 cup peeled and chopped ginger

  • 2 strips lemon peel

  • 3/4 cup agave syrup or honey or other sweetener

  • 5 cups chilled sparkling water or ginger ale


directions

  1. Place water, ginger, and lemon peel in a saucepan. Bring to a boil and then reduce heat and simmer for about 10-15 minutes.

  2. Add agave syrup or sweetener, stir continuously, and continue to boil until reduced to 1 ½ cups, for about 15 minutes.

  3. Strain the ginger syrup with a strainer. Save the syrup for use, and discard the solids.

  4. Allow ginger syrup to cool, add to glass container, seal tightly, and chill for at least 1 hour until cold.

  5. While serving, mix 1/4 cup ginger simple syrup with 1 cup cold sparkling water or ginger ale per serving and pour over ice.

  6. Additional ginger syrup or sweetener may be added, according to taste preferences. Enjoy!
